I decided to christen my newly seasoned molcajete today, and whipped up a batch of my special recipe guacamole. The essential ingredients for any respectable guac include: ripe avocados, fresh red onions, cilantro, tomatoes, salt and pepper.
In my standard version, I also add freshly diced garlic, chipotle pepper in adobo sauce, a sprinkle of lime juice and a splash of tomatillo salsa.
I’ve read that the more guac I make in my molcajete, the better it will taste over time.
